Reducing food waste at the household level is a key challenge to improve the sustainability of the global food system. This chapter focuses on food waste at the household level from a socio-psychological perspective. A brief introduction to the economic, social, and environmental issues related to food waste is followed by an overview of the main psychological factors contributing to the understanding of household food waste. In the subsequent section, studies guided by the theory of planned behavior—the theoretical framework most widely used to investigate food waste and its reduction—are discussed. In the final part of the chapter, we present a study on the influence of perceived behavioral control and perceived responsibility on willingness to pay a premium price for a certification scheme against food waste.

Abstract
Reducing food waste at the household level is a key challenge to improve the sustainability of the global food system. This chapter focuses on food waste at the household level from a socio-psychological perspective. A brief introduction to the economic, social, and environmental issues related to food waste is followed by an overview of the main psychological factors contributing to the understanding of household food waste. In the subsequent section, studies guided by the theory of planned behavior—the theoretical framework most widely used to investigate food waste and its reduction—are discussed. In the final part of the chapter, we present a study on the influence of perceived behavioral control and perceived responsibility on willingness to pay a premium price for a certification scheme against food waste.I documenti in IRIS sono protetti da copyright e tutti i diritti sono riservati, salvo diversa indicazione.
