The paper discusses knowledge dynamics and knowledge processes mobilised by the construction of provenance certification for food. Certification has a very ambigous status in the local food debate. Here is considered as an arena where local food actors may activates a new dynamic between different ways of knowing which guarantee legitimation to local knowledge as an important tool for the management of local human and natural resources.
