In the fish species processing and transformation, the problematic of the quality control and the labelling takes a remarkable importance, above all the result of treatments, when the partial or total disappearance of the individual morphologic characters occurs. The methodology proposed in this work is to characterize several sea food species starting from the proteins constituting them by the SDS-PAGE electrophoresis technique.
