Arabinogalactan (AG) is very promising as a functional additive to foodstuff. AG is a water-soluble polysaccharide present in several plant species, namely coffee beans, soy beans broad beans and cereals which has a positive effect reducing glucose levels and insulin resistance in mice. This work is integrated in a larger study, in which arabinogalactan is being studied as a potential glycemic index (GI) reducer of bread.
