The research aims to know the possibility to increase the meat production by wild ungulate in the Appennines. The work was carried out on 19 male deer reared in two herds (10 in herd 1 and 9 in herd 2) and slaughtered at 3 different classes of live weight (31-40, 41-50 and 51-60 kg), which are equivalent to age estimated about 18-26, 27-34 and 35-42 months, respectively. The results, in the complex, have put the importance of the herd and of the class of live weight at slaughter in the determine the value of some characteristics measured at slaughter and at jointing. Besides, it has been observed an interaction effect between the aforesaid two factors for the incidence of the fore and hind quarters on the right side hot weight.
