Coffee is among the most consumed beverages in Europe and North America. Ochratoxin A contamination of the coffee beans and hence of the coffee baked could be relevant. The different ways of preparation of this drink have been tested for ochratoxin A content and the possible influence of the preparation methods has been tested and compared. Quantitative analysis of the caffeine content has been performed and the caffeine content related to the antioxidant activity. Antioxidant activity has been evaluated on coffee drinks prepared according to the five different coffee drinks preparations evaluated.
